Tosh's Ramen opened its third location at Junction Commons in Kimball Junction on Oct. 19. A boutique fitness studio, Fourth Space Studios, plans to follow in November, adding two locally owned businesses to the shopping center's tenant list.
Both openings were announced in a sponsored listing published by Junction Commons on TownLift on Oct. 22. The center has also welcomed national retailers this fall, including Nordstrom Rack and Pandora.
Max Peck and his wife, Annie, both 33, own Tosh's Ramen. The couple operates locations in Holladay and at Woodbine Food Hall in Salt Lake City.
The new Kimball Junction restaurant is emphasizing lunch service, with plans to offer bento boxes, rice dishes and desserts alongside ramen.
Annie Peck, who is from Thailand, serves as head chef. Max Peck handles the business side.
The couple took over the Holladay location about five years ago from founder Toshio Sekikawa, who opened the first restaurant on State Street nearly 20 years ago. Sekikawa spent two months training the Pecks on his recipes before retiring and selling.
"I've tried hard to not deviate from anything that isn't his, while still improving quality, if possible, in any areas," Max Peck said in the sponsored listing.
The Pecks reported increasing sales at the Holladay location by about 50% in their first year while working 70-hour weeks. They later added the Woodbine Food Hall location.
Peck said the Park City location grew out of a friendship with Mike Harrison, owner of the now-closed Hana Ramen. The two traveled to Japan together to study ramen techniques.
Fourth Space Studios, meanwhile, plans to open a roughly 2,700-square-foot fitness space in November. The studio will offer hot Pilates, hot sculpt, hot yoga, hot deep stretch, strength training and guided breathwork, according to its website.
The space will also include locker rooms, showers and a merchandise area.
Co-founders Kendall Banks and Madeleine Vargas have roots in Park City and met as fitness instructors. Vargas previously started a breathwork business called Breathe to the Beat, while Banks had wanted to launch her own studio.
The two visited studios in other cities, including New York, before developing their own concept.
The businesses are joining several other changes at Junction Commons this fall. Nordstrom Rack held its grand opening Oct. 22, and Pandora opened Oct. 2.
Adidas is closed for renovation but plans to reopen before Black Friday. Brooks Brothers and Zumiez have relocated to new spaces within the property.
Fourth Space Studios has not announced a specific November opening date.
