Tannin Bar, a wine bar and restaurant with about 200 bottles on its list, plans to open at Quinn's Junction in November, according to the bar's Instagram account.
Owners Nicole Strothman and Aaron Deal said the concept grew from a gap they noticed after moving to the area about four years ago from Florida. Strothman, a healthcare lawyer and level one sommelier, told TownLift the east side of Park City lacked a dedicated neighborhood spot for wine.
"There are a lot of amazing restaurants, and a lot of them serve wine, but we didn't find something more local to our neighborhood that we could really go to," Strothman said.
The roughly 2,500-square-foot space will operate as a 21-and-older bar, Strothman and Deal told TownLift. Inside, the layout includes a traditional bar with 10 to 12 seats, high-top seating, a banquette wall, a lounge, a tasting room for eight to 10 guests and access to a shared courtyard patio.
The wine list will launch with about 25 selections by the glass and roughly 200 by the bottle, backed by storage for more than 2,000 bottles. Beer, liquor, mocktails and wine on tap round out the drink menu. Strothman said the list will feature less familiar varietals and bottles from unexpected wine regions.
The food menu will stay small and seasonal: cured meats and cheeses, shareable small plates, oysters and occasional caviar service, plus a short entree list of chicken, steak, fish and a burger. Deal said the goal is to source as much local and seasonal food as possible, including from area creameries.
Deal has about 25 years of restaurant experience, including training at Johnson & Wales University and a decade owning a restaurant in Virginia. Strothman plans to keep practicing law while running the bar.
Quinn's Junction, on Park City's east side, is seeing new commercial development including the Studio Crossing mixed-use project. An exact address for Tannin Bar has not been confirmed.
